Mediterranean Chicken with Cous-Cous

This recipe is a great option for a quick week-night dinner!

Ingredients:
2 T. Lemon Juice
1 T. EVOO
1 c. Chicken Stock
1 T. Dijon Mustard
1/4 t. dried Oregano
1 clove Garlic, minced
1/4 c Sun-dried Tomatoes
1 1/4 lb. boneless, skinless Chicken Breasts, cut into strips
3 c. Water
1 1/2 c. Cous-Cous
2 T. Goat Cheese

Method:
Combine the first 7 ingredients to create the marinade for the chicken.
Marinate the chicken for at least 2 hours.
Prepare Cous-Cous per the package instructions.
In a medium skilled, cook the chicken with a small amount of marinade for 8 minutes. Set aside.
Add remaining marinade and bring to a full boil.
Top cous-cous with the chicken and sauce. Crumble goat cheese on top.

I think this goes perfect with steamed broccoli!
